1 tablespoon olive oil
1 brown onion
2 cloves garlic
1 red capsicum
1 green capsicum
1 zucchini
1 tin corn (400g)
1 tin black beans (400g)
1 jar enchilada sauce
500g chicken thigh
1 cup shredded mexican cheese
Extra
Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
