Vegetarian Pad Thai with Egg & Noodles

Ingredients

  • 2 tablespoons olive oil

  • 1 brown onion

  • 1 zucchini

  • 1 red capsicum

  • 2 carrots

  • ½ cup peanuts

  • ½ cup fresh coriander

  • 2 eggs

  • 1 tablespoon fish sauce

  • 3 tablespoons brown sugar

  • 3 tablespoons stock or 1 stock cube or 1 teaspoon stock powder

  • 2 tablespoons rice vinegar

  • 2 tablespoons soy sauce

  • 1 packet rice noodles
