Vegan Butter Chicken with Tofu

Ingredients

  • 1 brown onion

  • 2 cloves garlic

  • 2cm fresh ginger

  • 2 carrots

  • 1 zucchini

  • 1 broccoli

  • 1/2 cauliflower

  • 1 teaspoon cinnamon

  • 1 teaspoon paprika

  • 2 teaspoons garam masala

  • 1 teaspoon cardamom

  • 1 teaspoon coriander

  • 1 teaspoon cumin

  • 1 teaspoon turmeric

  • 1 tin coconut milk (400ml)

  • 1 tin coconut cream (400ml)

  • 1 lemon juiced

  • 200g tomato paste

 

  • 1 block firm tofu (500g)

Extra

Add on:


2 cups uncooked brown or white rice (makes 4-5 cups cooked)

  • scales

  • juicer for lemon

  • 1 teaspoon

  • 1 tablespoon

  • knife

  • chopping board

  • wooden/large spoon

  • container to put the family sized meal in
