Thai Lamb Curry (Thai Paste from scratch)

Ingredients

  • 3 tablespoons olive oil

  • 1 brown onion

  • 2 cloves garlic

  • 2 sticks celery

  • 1 carrot

  • 1 zucchini

  • 200g green beans

  • 1 red capsicum

  • 1kg diced lamb

  • 1 tin coconut milk

  • 2 tablespoons tomato paste

 

  • 2 shallots

  • 3cm ginger

  • 2 cloves garlic

  • 1 bunch coriander

  • 1 stick lemongrass

  • 1 lime

  • 1 teaspoon cumin

  • 1 teaspoon ground coriander

Extra

Add on:


2 cups uncooked brown or white rice (makes 4-5 cups cooked)

  • Electric Pressure Cooker

  • food processor or nutribullet or similar to make thai paste

  • 1 teaspoon

  • 1 tablespoon

  • knife

  • chopping board

  • wooden/large spoon

  • container to put the family sized meal in
