Thai Coconut Soup

Ingredients

  • 2 tablespoons  olive oil

  • 1 brown onion

  • 2 cloves garlic minced

  • 200g mushrooms

  • 2 carrots

  • 2 tablespoons soy sauce

  • 1 teaspoon ground ginger

  • 1 teaspoon brown

  • Zest from one lemon

  • 3 cups vegetable stock or 3 stock cubes or 3 teaspoons stock powder

  • 2 tins coconut milk

  • ½ bunch coriander

  • 1 lime

  • grater for lemon zest

  • knife

  • chopping board

  • wooden/large spoon

  • container to put the family sized meal in
