Thai Coconut Fish

Ingredients
2 tablespoons olive oil
2 shallots
2 cloves garlic
3cm ginger
1 red capsicum
2 tablespoons thai red curry paste
500g firm white fish
1 tin coconut milk (400ml)
1 teaspoon fish sauce
1 lime
4 spring onion
1 handful coriander
Extra
Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
