Thai Beef Noodles (Thai Paste from scratch)

Ingredients

  • 1 tablespoon sesame oil

  • 1/3 cup soy sauce

  • 1 tablespoon fish sauce

  • 1 lime

  • 500g beef stir fry strips

  • 1 red or green capsicum

  • 2 carrots

  • 1 broccoli

  • 200g rice noodles (thick or thin)

 

Thai Paste

  • 1 tbsp vegetable oil

  • 1 lemongrass stalk

  • 2 shallots

  • 2 cloves garlic

  • 1 bunch coriander

  • 4cm ginger

  • 1 lime

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • food processor or nutribullet or similar to make thai paste

  • large non-stick fry pan or wok

  • medium sized pot

  • 1 teaspoon

  • 1 tablespoon

  • knife

  • chopping board

  • wooden/large spoon

  • small container or zip lock bag to freeze half of thai paste

  • container to put the family sized meal in
