Tandoori Tofu with Cauliflower & Potatoes

Ingredients
2 tablespoons olive oil
3 cloves garlic
3cm ginger
2 teaspoons fennel seeds
2 teaspoons garam masala
1 teaspoon ground coriander
½ teaspoon turmeric
1 block firm tofu 500g
1 whole cauliflower
500g potatoes
2 limes
1 cup vegan plain unsweetened yogurt or 1 tin coconut cream
Extra
Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
