Tandoori Tofu with Cauliflower & Potatoes

Ingredients

  • 2 tablespoons olive oil

  • 3 cloves garlic

  • 3cm ginger

  • 2 teaspoons fennel seeds

  • 2 teaspoons garam masala

  • 1 teaspoon ground coriander

  • ½ teaspoon turmeric

  • 1 block firm tofu 500g

  • 1 whole cauliflower

  • 500g potatoes

  • 2 limes

  • 1 cup vegan plain unsweetened yogurt or 1 tin coconut cream

Extra

Add on:


2 cups uncooked brown or white rice (makes 4-5 cups cooked)
