Sweet Potato & Peanut Stew

Ingredients
1 tablespoon olive oil
1Â brown onion
3 cloves garlic
3cm ginger
1 tablespoon ground coriander
2Â large sweet potatoes
1Â tin diced tomatoes
3 cups vegetable stock or 2 stock cubes or 2 teaspoons stock powder
3/4 cup peanut butter (creamy or smooth)
120g spinach
Juice of 2 lemons
Extra
Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
