Spicy Thai Chicken & Veg Noodles

Ingredients

  • 1 tablespoon sesame oil

  • 1 brown onion

  • 2 cloves garlic

  • 3cm ginger

  • 200g mushrooms

  • 1 red capsicum

  • 1 green capsicum

  • 500g chicken thigh

  • ¼ cup peanuts 

  • 1 cup chicken stock of 1 stock cube or 1 teaspoon stock powder

  • ½ cup soy sauce 

  • 3 tablespoons brown sugar

  • 1 tablespoon sriracha sauce 

  • 1 teaspoon red chilli paste or chilli flakes

  • 400g wok ready noodles
