Spiced Tuna Rice

Ingredients

  • 2 tablespoons olive oil

  • 1 red onion

  • 2 cloves garlic

  • 3cm ginger

  • 2 red capsicum

  • 1 tablespoon korma paste

  • 2 cups basmati or long grain rice

  • 250ml vegetable stock or 1 stock cube or 1 teaspoon stock powder

  • Juice of 1 lemon

  • 2 cups spinach

  • 1 large tin tuna (425g)
