Satay Tofu Stir Fry

Ingredients

  • 2 tablespoons sesame oil

  • 1 brown onion

  • 2 cloves garlic

  • 2cm ginger

  • 1 broccoli

  • 1 red capsicum

  • 1 cup snow peas

 

  • ½ cup unsalted runny peanut butter

  • 3 tablespoons soy sauce

  • Juice of 1 lime

  • 2 teaspoons brown sugar or maple syrup

  • 2 teaspoons cornstarch

 

  • 1 block firm tofu (500g)

Extra

Add on:


2 cups uncooked brown or white rice (makes 4-5 cups cooked)

  • 1 large oven baking tray

  • baking paper

  • measuring cups

  • 1 teaspoon

  • 1 tablespoon

  • wooden/large spoon
