Satay Chicken Noodle Stir Fry

Ingredients

  • 2 tablespoons olive oil

  • 1 brown onion

  • 2 cloves garlic

  • 3cm ginger

  • 500g chicken thigh

  • 1 broccoli

  • 2 carrots

  • 1 red capsicum

  • 2 tins water chestnuts (225g each)

  • 1 packet wok ready noodles (approx. 400g)

 

  • 1 cup peanut butter

  • 2 tablespoons soy sauce

  • Juice of ½ lemon

  • 1 tin coconut milk

  • wooden/large spoon

  • container to put the family sized meal in
