Roasted Cauliflower & Chickpea Stew

1 brown onion
3 cloves garlic
1 1/2 teaspoons ground turmeric
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground cinnamon
1 teaspoon ground coriander
1 teaspoon paprika
1/2 tsp cardamom
1Â whole head cauliflower
4 carrots
2Â tins chickpeas
1Â tin diced tomatoes

Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
