Moroccan Spiced Chickpea Bowl

Ingredients
1 tablespoon olive oil
1 brown onion
2 cloves garlic
1 large sweet potato
2 carrots
1 tin diced tomatoes
1 tin chickpeas
2 tablespoons tomato paste
1 teaspoon turmeric
1 teaspoon paprika
1 teaspoon garam masala
2 teaspoons cumin
½ teaspoon garlic powder
1 cup stock or 1 stock cube or 1 teaspoon stock powder
Extra
Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
