Moroccan Lamb Stew (diced lamb)

1 tablespoon olive oil
1Â brown onion
2 cloves garlic
2Â celery sticks
4Â medium potatoesÂ
3Â carrotsÂ
1 cup frozen peas
1kg diced lamb
½ teaspoon cinnamon powder
1 teaspoon dried oreganoÂ
1 teaspoon paprika
1 teaspoon garam masala
1 teaspoon ground coriander powder
½ teaspoon turmeric
2Â bay leavesÂ
6Â dried apricots
1Â tin diced tomatoes (400g)
1 cup stock or 1 stock cube or 1 teaspoon stock powde
Extra
Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
