Moroccan Lamb & Chickpea Stew

Ingredients
1 tablespoon olive oil
1 brown onion chopped
2 cloves garlic minced
2 sticks celery
2 carrots
4 potatoes
2 teaspoons cumin
1 teaspoon paprikaÂ
2 teaspoon turmeric
1 teaspoon allspiceÂ
2 teaspoon cinnamon
1kg lamb mince
1Â tin diced tomatoes
1 cup chicken stock or 1 stock cube of 1 teaspoon stock powder
6 dried apricots
1 tin chickpeas
1Â lemon zest and juice
Extra
Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
