Moroccan Lamb & Chickpea Stew

Ingredients

  • 1 tablespoon olive oil

  • 1 brown onion chopped

  • 2 cloves garlic minced

  • 2 sticks celery

  • 2 carrots

  • 4 potatoes

  • 2 teaspoons cumin

  • 1 teaspoon paprika 

  • 2 teaspoon turmeric

  • 1 teaspoon allspice 

  • 2 teaspoon cinnamon

  • 1kg lamb mince

  • 1 tin diced tomatoes

  • 1 cup chicken stock or 1 stock cube of 1 teaspoon stock powder

  • 6 dried apricots

  • 1 tin chickpeas

  • 1 lemon zest and juice

Extra

Add on:


2 cups uncooked brown or white rice (makes 4-5 cups cooked)

  • 1 small bowl

  • 1 grater for lemon zest

  • knife

  • chopping board

  • wooden/large spoon

  • container to put the family sized meal in
