Middle Eastern Lamb Mince Stew

Ingredients
2 tablespoons olive oil
1 brown onion
2 cloves garlic
3cm ginger
2 sticks celery
2 carrots
4 potatoes
2 teaspoons cumin
1 teaspoon ground coriander
1 teaspoon turmeric
1 teaspoon cinnamon
2 tablespoons tomato paste
1kg lamb mince
2Â tablespoons honey or brown sugar
1 cup chicken stock 1 stock cube or 1 teaspoon stock powder
1Â tin chickpeas (400g)
6 dried apricots
Extra
Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
