Lentil Dahl

Ingredients

  • 1 tablespoon olive oil

  • 1 brown onion

  • 3 cloves garlic

  • 3cm ginger

  • 1 large carrot

  • 1 red capsicum

  • 2 teaspoons cumin

  • 2 teaspoons garam masala

  • 1 teaspoon ground coriander

  • 1 teaspoon turmeric

  • 1 teaspoon paprika

  • 2 teaspoons brown sugar or maple syrup

  • 2 tins lentils

  • 1 cup vegetable stock or 1 stock cube or 1 teaspoon stock powder

  • 1 tin coconut milk

Extra

Add on:


2 cups uncooked brown or white rice (makes 4-5 cups cooked)
