Lamb Shank Stew

Ingredients
1 tablespoon olive oil
1 brown onion
2 cloves garlic
2 sticks celery
2 carrots
1 tin tomatoes
2 teaspoons thyme
1 stock cube or 1 teaspoon stock powder
4 bay leaves
4 lamb shanks
Extra
Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
