Hot Fruity Chickpea Curry

3 tablespoons olive oil
1 brown onion
2 cloves garlic
3cm ginger
1 large sweet potato
1 teaspoon mustard seeds
1 teaspoon cardamom
2 teaspoons garam masala1 teaspoon cinnamon
½ teaspoon turmeric
1 teaspoon cumin
1 teaspoon ground coriander
2 tablespoons tomato paste
1 tin chickpeas
2 apples
1 tin tomatoes
Extra
Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
