Honey Soy Tofu Stir Fry (with maple syrup)

Ingredients
1 tablespoons olive oil
1 brown onion
2 cloves garlic
3cm gingerÂ
1 broccoli
1 red capsicum
2 carrotsÂ
1/3 cup maple syrup
1/4 cup soy sauce
1 teaspoon cinnamon
2 teaspoons cornstarchÂ
1 block firm tofu (500g)
Extra
Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
