Fish Curry

Ingredients
2 tablespoon olive oil
1 brown onion
3 cloves garlic
3cm ginger
1 carrot
1 red capsicum
200g green beans
2 teaspoons garam masala
1 teaspoon turmeric
10 – 15 fresh curry leaves
1 tin coconut milk (400ml)
1 tin diced tomatoes (400g)
500-600g firm white fish
1 handful fresh coriander (cilantro)
1 lime
Extra
Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
