1 brown onion
3 cloves garlic
3cm ginger
2 medium eggplants
1Â red capsicum
2 teaspoons ground coriander
2 teaspoons paprika
2 teaspoons turmeric
1 teaspoon garam masala
1 tin diced tomatoes
1 tin coconut milk
1 tin chickpeas
Extra
Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
