Coconut Milk Chicken with Sweet Potato

2Â tablespoons sesame oil
2Â shallots
2 cloves garlic
3cm ginger
1Â teaspoon turmeric
½ bunch coriander
1Â medium sweet potato
1.5Â cups chicken stock or 1 stock cube or 1 teaspoon stock powder
1 tin coconut milk (400ml)
1 tablespoons fish sauce
2 cups spinach
juice of 1 lime
500g chicken thigh

Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
