Coconut Lamb Curry (diced lamb)

1 brown onion
2 cloves garlic
2 sticks celery
2 carrots
1 zucchini
1 red capsicum
1kg diced lamb
2 teaspoons garam masala
1 teaspoon cumin
1 teaspoon ground coriander
1 teaspoon turmeric
1 teaspoon fennel seeds
1 tin coconut milk
2 tablespoons tomato paste
Extra
Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
