Coconut Chickpea Curry

Ingredients

  • 1 tablespoon olive oil

  • 1 brown onion

  • 2 cloves garlic

  • 2 carrots

  • 1 red capsicum

  • 1 cup peas

  • 2 tablespoons tomato paste

  • 1 teaspoon ground coriander

  • 1 teaspoon cumin

  • 1 teaspoon ginger

  • 1 teaspoon onion powder

  • 1 teaspoon garam masala

  • 1/2 teaspoon turmeric

  • 1 tin diced tomatoes

  • 1 tin coconut milk

  • 2 tins chickpeas

  • ½ lemon juice

Extra

Add on:


2 cups uncooked brown or white rice (makes 4-5 cups cooked)

  • 1 large non-stick fry pan or wok

  • 1 large sized pot

  • measuring cups

  • 1 teaspoon

  • 1 tablespoon

  • juicer for lemon

  • strainer

  • knife

  • chopping board

  • wooden/large spoon

  • container to put the family sized meal in
