1 tablespoon olive oil
1Â brown onion
2 cloves of garlic
1Â red capsicum
1Â carrotÂ
1 tin diced tomatoes
5 tbsp tomato paste
2 cups vegetable stock or 2 stock cubes or 2 teaspoons stock powder
1 tin black beans
1 tin kidney beans
2Â teaspoons brown sugar or maple syrup
1 teaspoon ground cumin
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon smoked paprika
Extra
Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
