Chickpea Korma

Ingredients
1 tablespoon olive oil
1Â red onion
2Â cloves garlic
3cm ginger
½ pumpkin
1 bunch coriander
1 teaspoon fennel seeds
1/2 teaspoon cardamom
1 teaspoon cinnamon
1 teaspoon garam masala
1 teaspoon cumin
1 tablespoon brown or raw sugar
1 tin coconut milk
1 cup vegetable stock or 1 stock cube or 1 teaspoon stock powder
2 tins chickpeas
Extra
Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
