Chickpea & Fennel Stew

Ingredients
2 tablespoons olive oil
1 brown onion
2 cloves garlic
1 red capsicum
1 fennel bulb
1½ teaspoons cumin
3 teaspoons smoked paprika
1 teaspoon ground fennel seeds
1 teaspoon thyme
2 tins diced tomatoes
2 tins chickpeas or cannellini beans
12 pitted green olives
¼ cup pumpkin seeds
Extra
Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
