Chicken Stir Fry

Ingredients
2 tablespoons olive oil
1 brown onion
2 cloves garlic
3cm ginger
1 red capsicum
2 carrots
1 broccoli
500g chicken thigh

1/4Â cup chicken stock or 1 stock cube or 1 teaspoon stock powder
1/4Â cup soy sauce
1Â tablespoon honey
1 teaspoon sesame oil
1 teaspoon rice vinegar (or apple cider vinegar)
1Â tablespoon cornstarch
Extra
Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
