Blueberry Muffins (can be made GF)

Ingredients

  • 1¾ cups plain flour

  • 1 teaspoon baking powder

  • ½ teaspoon bicarb soda

  • ⅓ cup coconut oil or olive oil

  • ½ cup honey or maple syrup

  • 2 eggs

  • 1 cup plain Greek yogurt

  • 2 teaspoons vanilla extract

  • zest of 1  lemon

  • 1½ cups frozen blueberries

  • wire cooling rack

  • measuring cups

  • teaspoon

  • grater for lemon zest
