Black Bean Chilli

Ingredients

  • 2 tablespoons olive oil

  • 1 red onion

  • 2 cloves garlic

  • 1 red capsicum

  • 2 carrots

  • 2 sticks celery

  • ½ teaspoon chilli powder (mild)

  • 2 teaspoons  cumin

  • 1 ½ teaspoons  paprika*

  • 1 teaspoon  oregano

  • 2 tins diced tomatoes

  • 2 tins black beans

  • 2 cups vegetable stock or 2 stock cubes or 2 teaspoons stock powder

  • 1 lime

Extra

Add on:


2 cups uncooked brown or white rice (makes 4-5 cups cooked)
