Black Bean Chilli

Ingredients
2 tablespoons olive oil
1 red onion
2 cloves garlic
1 red capsicum
2 carrots
2 sticks celery
½ teaspoon chilli powder (mild)
2 teaspoons cumin
1 ½ teaspoons paprika*
1 teaspoon oregano
2 tins diced tomatoes
2 tins black beans
2 cups vegetable stock or 2 stock cubes or 2 teaspoons stock powder
1 lime
Extra
Add on:
2 cups uncooked brown or white rice (makes 4-5 cups cooked)
