  • 250g thick egg noodles

  • 1 tablespoon olive oil

  • 1 brown onion

  • 2 cloves garlic 

  • 500g  mushrooms

  • 2 carrots 

  • 2 stalks celery 

  • 500g beef mince

  • 1 red capsicum

  • 2 tbsp cornflour

  • 2 cups beef broth or 1 stock cube or 1 teaspoon stock powder

  • 3/4 cup sour cream

  • 100g spinach
