Asian Veg Stir Fry Noodles

Ingredients

  • 1 tablespoon sesame oil

  • 1 brown onion

  • 3 cloves garlic

  • 3cm ginger

  • 200g mushrooms

  • 1 large carrot 

  • 1 red capsicum

  • 1  zucchini

  • 1 teaspoon paprika

  • 2/3 cup vegetable stock or 1 stock cube or 1 teaspoon stock powder 

  • 4 tablespoons soy sauce

  • 2 tablespoons rice vinegar

  • 2 tablespoons maple syrup 

  • 1 tablespoon cornstarch

  • 400g Singapore noodles
